Green Foods

Many vegetables come in health–giving green. Think leafy greens like arugula, kale, collards, spinach, and watercress or green beans, artichokes, Brussels sprouts, okra, snow peas, and zucchini. Incorporate these and green fruit such as Granny Smith apples, limes, honeydew melon, and kiwi into your diet regularly. Even some tasty legumes are green, such as split peas, some lentils, and lima beans.

 

Other suggestions:

  • Try variety of baby greens–such as arugula, kale, lettuce varieties, and spinach–in your daily fresh green salad. The variety of flavors is quite amazing.
  • Try a baked tart green apple sprinkled with cinnamon and stuffed with raisins for dessert.
  • Update your split pea soup recipe by flavoring it with soy sauce and crushed red pepper and adding chopped collards and carrots to give it color and texture.
  • Start your day with a slice of delicious melon or sliced kiwi fruit.
  • A steamed artichoke makes a beautiful and enjoyable first course.
