Blue/Purple Foods

Incorporate black beans, fruits such as blackberries, blueberries, plums, figs, and grapes, and vegetables such as eggplant, purple cabbage, and purple–fleshed potatoes into your menu.

 

Other ideas:

  • A breakfast of cereal and non–dairy milk becomes more beneficial when you add some blue to the bowl, like blueberries or blackberries.
  • Dried figs make a delicious calcium–rich and phytochemical–packed snack.
  • Try adding soluble–fiber–packed chopped eggplant to stews and curries.
  • Black bean dip makes a delicious filling for pita bread pockets. Add some chopped vegetables and salsa for a delicious nutrient–packed lunch.
