Using Color to Create Healthy Meals

An easy way to make your meals more healthful is to fill your plate with brightly colored fruits, vegetables, and legumes. A colorful plate looks beautiful, and the hues in fruits, vegetables, and legumes are an indicator of the high levels of antioxidants, vitamins, and disease–fighting phytochemicals found in these foods.


The produce section of your grocery store is an ideal place to find colorful, health–giving foods. Next time you are shopping, challenge yourself to select one or two fruits or vegetables of each color.


Expand your horizons by trying out one unfamiliar fruit or vegetable each week. If you need information on how to prepare or use it, explore the Internet for recipes or ask the produce person or another shopper at your store.
