Living Gluten–Free

While embarking on a gluten–free diet may be a challenge at first, there are many gluten–free products available. Here are some ideas to get you started: 

  • Packaged foods made from corn, potato, rice, soybean, tapioca, arrowroot, amaranth, quinoa, millet, and buckwheat are gluten–free. Your local health food store likely carries many of these gluten–free products, and they can be ordered on the Internet.
  • Gluten–free baking may take some time to master, but through experimentation you will likely find combinations that produce delicious results. In addition, there are more and more gluten–free products on the market.  There are a number of flours that are acceptable, such as buckwheat, rice, amaranth, and bean flours. It may take some experimenting to get the best results in your recipe. Here is one option to try:
  • If a recipe calls for 1 cup of flour, replace with 2 parts white rice flour, 2/3 part potato starch flour, 1/3 part tapioca flour, and a teaspoon of xanthan gum.

Remember that nearly all whole foods are gluten–free, so build your diet from legumes, starchy vegetables, fruits, green vegetables, rice, and corn and enjoy the delicious variety of gluten–free foods available to you.

 

Studies show that eliminating gluten from the diet does result in alleviating the troubling symptoms. Soon you will see that a gluten–free diet is worth all your effort.
