Reading Labels

Managing gluten intolerance requires a diet restriction of wheat, barley, rye, and, in some cases, oats. It is important to become an avid label reader to ensure that any traces of gluten are removed from your diet. Wheat, barley, rye, and oats, of course, may be main ingredients, but they may also be used in the processing and preparation of manufactured foods. It is best to check with the manufacturer to ensure that the ingredient does not contain gluten grains.

The following list shows some ingredients that may contain wheat, barley, rye, or oats:

  1. Hydrolyzed vegetable protein
  2. Flour or cereal products
  3. Vegetable protein
  4. Malt or malt flavoring
  5. Starch
  6. Modified starch or modified food starch
  7. Vegetable gum
  8. Soy sauce or soy sauce solids
  9. Monoglycerides and diglycerides
  10. Some spices: Check for spices that contain wheat flour, which is used to prevent clumping.

A complete list of safe and unsafe ingredients is available at www.celiac.com.
