Understanding Soy Foods

Soy foods include fresh soybeans, called edamame, and any foods made from soybeans, including soymilk, tofu, tempeh, miso, and vegetarian meat and dairy substitutes, such as soy meats and soy cheeses. Like most other plant foods, the most healthful soy foods are those that are minimally processed and so retain all of their original nutrients.

Soy products make eating a vegetarian or vegan diet easy, since these foods are convenient and tasty substitutes for meat and other unhealthy products that people, quite rightly, are looking to avoid. Soy products are not essential, but are often convenient and tasty.
