Understanding “Whole Foods”

Grains, beans, fruits, and vegetables provide healthful nutrition. In their natural state, they are loaded with vitamins, minerals, fiber, and other essential nutrients. But sometimes the processing that turns these simple foods into commercial products takes away some of their value, or adds ingredients that are not helpful.

The term “whole foods” refers to those that are those that are minimally processed. Processing includes any alteration of a food from its natural state such as peeling, slicing, cooking, dehydrating, preserving, frying, freezing and roasting. The harder it is to tell what the food looked like when it came out of the ground, the more likely the food is highly processed.
