Oatmeal Cookies

Makes 30 2-inch cookies

With the nutrition of a bowl of hot oatmeal and an aroma to soothe the soul, these cookies are a treat to serve with lunch or dinner, or as a healthy after-school snack.

1 cup unbleached or whole-wheat pastry flour
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup sugar or other sweetener
1/3 cup vegetable oil
1/4 cup molasses
1 teaspoon vanilla extract
1 1/2 cups rolled oats
1/4 cup fortified soy- or rice milk
1/2 cup raisins
1/2 cup chopped walnuts (optional)
1 vegetable oil spray

Preheat oven to 350°F.

Mix flour, cinnamon, baking soda, baking powder, and salt in a bowl.

In a separate large bowl, mix sugar or other sweetener, oil, molasses, and vanilla until smooth. Add flour mixture, oats, non-dairy milk, raisins, and walnuts, if using. Mix well.

Drop by rounded tablespoonfuls onto a vegetable oil sprayed baking sheet, leaving 2 inches between cookies.

Bake until lightly browned, 12 to 15 minutes. Transfer to a rack to cool, then store in an airtight container.
