Mashed Potatoes

Makes about 10 1/2-cup servings

Serve with Brown Gravy and enjoy this traditional favorite to your heart's content!

4 russet potatoes, peeled and diced
2 cups water
1 cup fortified unsweetened soy- or rice milk
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/2 teaspoon salt
1 1/2 tablespoons rice flour
2 tablespoons potato flour
1/2 cup Corn Butter, or 1 tablespoon non-hydrogenated, dairy-free margarine

Combine potatoes and water in a saucepan. Simmer until potatoes are tender when pierced with a fork, about 10 minutes. Drain. Mash potatoes.

Pour non-dairy milk, onion powder, garlic powder, salt, flours, and Corn Butter or margarine into a blender. Blend until completely smooth, about 1 minute. Add to mashed potatoes and stir to mix.
