Savory Spinach SpreadMakes about 2 cups Serve this delightfully creamy spread on crackers, pita triangles, or thinly sliced French bread. 1 1/2
cups
(about 12 ounces) crumbled
firm silken tofu
Combine tofu, lemon juice, onion powder, tarragon, garlic powder, and salt in blender or food processor and blend until smooth and creamy. Transfer to a medium bowl. Squeeze spinach as dry as possible. Stir into tofu along with carrots and green onions. Mix well. Chill thoroughly before serving. Per 1/2-cup serving
