Savory Spinach Spread

Makes about 2 cups

Serve this delightfully creamy spread on crackers, pita triangles, or thinly sliced French bread.

1 1/2 cups (about 12 ounces) crumbled firm silken tofu
1 tablespoon fresh lemon juice
3/4 tablespoon onion powder
1/2 teaspoon dried tarragon
1/4 teaspoon garlic powder
1/4 teaspoon salt
1 10-ounce box frozen chopped spinach, thawed
1 cup grated carrots
1/4 cup thinly sliced green onions

Combine tofu, lemon juice, onion powder, tarragon, garlic powder, and salt in blender or food processor and blend until smooth and creamy. Transfer to a medium bowl. Squeeze spinach as dry as possible. Stir into tofu along with carrots and green onions. Mix well. Chill thoroughly before serving.
