fresh spinach, stems removed
Wash spinach well to remove any dirt, grit, or sand. Heat oil in a large skillet. When hot, add onion. Reduce heat, cover, and cook, stirring occasionally until limp. Stir in garlic and cook 1 minute longer. Add spinach and sprinkle lightly with salt, black pepper, and nutmeg. Cover and cook just until wilted. Remove cover and cook a few minutes longer until all the liquid cooks off. Do not overcook! Per serving (1/4 of recipe)
