Creamy Fudge Frosting

Makes 3 cups

Spread this extraordinary fudge frosting on your favorite cake, muffins, or cookies.

1 1/2 cups (about 12 ounces) firm silken tofu
3/4 cup pure maple syrup
2/3 cup natural almond or cashew butter
1/2 cup unsweetened cocoa or carob powder
1 tablespoon vanilla extract

Combine all ingredients in a food processor and process until smooth and creamy. Store any unused frosting in the refrigerator.
