Strawberry Delight

Makes 4 servings

1/2 cup raw cashews
3 tablespoons agave nectar or apple juice concentrate
2 cups fresh or frozen strawberries

Soak cashews in water for 1 1/2 hours. Mix all ingredients in a food processor until the sauce is smooth. Refrigerate one hour or more before serving. This can be eaten alone or served with pancakes, granola, fruit salad, or baked goods.
