Applesauce Muffins

Makes 12 muffins

2 cups whole-wheat pastry flour
1 tablespoon low-sodium baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup sugar
1 15-ounce can applesauce
1/2 cup water
1/2 cup raisins
1 vegetable oil spray

Preheat oven to 375°F.

Mix together flour, baking powder, baking soda, salt, cinnamon, and sugar. Add applesauce, water, and raisins and stir until just mixed. Lightly spray muffin cups with vegetable oil spray and fill to the top. Bake 25 to 30 minutes, until tops of muffins bounce back when pressed lightly. Remove from oven and let stand for 1 to 2 minutes, then remove muffins from pan. When muffins are cool, store in an airtight container.
