Roasted Yams or Sweet Potatoes

Makes 6 servings

4 yams or sweet potatoes
1 vegetable oil spray
2 teaspoons garlic and herb seasoning or other seasoning mix
1/4 teaspoon salt
1 freshly ground black pepper

Preheat oven to 500°F.

Scrub yams or sweet potatoes and cut them into chunks. Spray a 9"x13" baking dish with vegetable oil spray. Spread yams or sweet potatoes in the dish, sprinkle with seasoning mix, salt, and black pepper and toss to mix. Bake until tender when pierced witha fork, 25 to 30 minutes.
