Banana Bundt Cake

Makes 1 bundt cake

This cake is delicious plain or frosted with Date Butter Frosting.

3 cups whole-wheat pastry flour
2 teaspoons baking soda
3/4 teaspoon salt
1 cup wheat germ
6 ripe bananas, mashed (about 2 1/2 cups)
3/4 cup sugar
1 cup soymilk
2 teaspoons vanilla extract
1/2 cup finely chopped dates or date pieces
1 vegetable oil spray

Preheat oven to 350°F.

Mix flour, baking soda, salt, and wheat germ in a bowl. In a separate bowl, combine bananas, sugar, soymilk, and vanilla. Combine the flour mixture with the banana mixture. Add dates and stir to mix. Spread into a vegetable oil sprayed bundt pan (or 9"×13" baking dish) and bake for 55 minutes, until a toothpick inserted into the center comes out clean.
