Cashew Cheese

Makes 2 cups

This sauce can be used as a topping on pasta or pizza, or as a dip for vegetables

1/2 cup raw cashews
2 ounces pimentos
1/4 cup lemon juice
3 tablespoons nutritional yeast flakes
1 teaspoon salt
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1 1/2 cups water

Place all ingredients in a blender and process until very smooth.
