Ethiopian Tomato Salad

Makes 4 servings

1/2 jalapeno pepper, seeded and minced
1/4 cup chopped red onions
1 1/2 tablespoons lemon juice
1/4 teaspoon black pepper
3 ripe tomatoes, chopped
1 salt, to taste

Combine jalapeno, onions, lemon juice, and black pepper in a bowl. Stir in tomatoes. Add salt to taste. Chill before serving.
