Pinto Bean Burritos

Makes 8 burritos

1 onion, chopped
1/2 green bell pepper, seeded and chopped
2 garlic cloves, minced
1 teaspoon ground cumin
1/4 cup water
4 cups cooked pinto beans
1 tomato, chopped
1 teaspoon salt
1/4 teaspoon black pepper
8 whole-wheat tortillas

Combine onion, bell pepper, garlic, cumin, and water in a saucepan and simmer for 10 minutes.

Heat beans, mash them, and add to saucepan. Add tomato, salt, and black pepper. Stir and simmer for 15 minutes.

Warm tortillas by lightly toasting in a dry hot skillet for less than a minute each. Alternately, tortillas can be warmed by wrapping in a dish towel and heating in a strainer basket over boiling water for a few minutes.

Place bean filling on tortillas, top with salsa, hot sauce, nutritional yeast flakes, or shredded lettuce, if desired, and roll up.
