Apricot-Pineapple Gel

Makes about 2 1/2 cups

2 cups natural apricot juice
1/2 cup crushed pineapple
3 tablespoons apple juice concentrate
1 tablespoon arrowroot
1 1/2 teaspoons agar powder

In a large saucepan stir all ingredients together until completely smooth. Bring to a simmer. Simmer uncovered, stirring constantly, for about 3 minutes, until slightly thickened. Pour into serving dishes and chill completely.
