Poached Apples

Makes 2 apples

2 medium apples
3 - 5 large pitted dates
1/4 cup apple juice concentrate
1/4 cup water

Remove apple cores to within 1/4 inch of the bottom of each apple. Stuff each apple with the dates, then place apples in a medium saucepan. Add apple juice concentrate and water. Bring to a slow simmer. Cover and cook for 20 to 25 minutes, or until tender. Serve hot or chilled.
